Tofu Pudding

Tofu pudding, also known as soybean pudding or doufu hua in Chinese, is a sweet and silky dessert made from soy milk that has been coagulated using a natural agent such as gypsum, which creates a soft and delicate texture.

How to make tofu pudding:

Ingredients:

  • 4 cups unsweetened soy milk
  • 1 tsp. gypsum powder (also known as calcium sulfate)
  • 2 tbsp. water
  • 1/4 cup sugar
  • 1/4 cup water
  • Toppings of your choice (e.g. chopped fruit, peanuts, sesame seeds)

Instructions:

  1. In a small bowl, mix the gypsum powder and 2 tablespoons of water until the powder is fully dissolved.
  2. In a pot, heat the soy milk over medium heat until it starts to boil.
  3. Turn off the heat and slowly pour in the gypsum mixture while stirring the soy milk gently.
  4. Cover the pot with a lid and let the mixture sit for about 10 minutes to allow the soy milk to coagulate and form curds.
  5. In a separate pot, mix the sugar and 1/4 cup of water over low heat until the sugar dissolves and the mixture thickens to form a syrup.
  6. Once the soy milk has coagulated, gently ladle it into bowls or cups, leaving behind any excess liquid. Top the pudding with the syrup and any other toppings of your choice.
  7. Let the pudding cool to room temperature, then chill in the refrigerator for at least an hour before serving.
